Ingredients

1 cup chopped onions
2/3 cup chopped green bell pepper
2 large cloves garlic, finely chopped
2 tablespoons margarine or butter
1 can (15.5 oz) red beans, undrained
1/2 lb smoked sausage, sliced
1 dried bay leaf
4 cups hot cooked rice

Directions

In 10-inch skillet, melt margarine. Add onions, green pepper and garlic; cook until onion is tender. Stir in beans, sausage and bay leaf; simmer 10 minutes. Remove bay leaf. Serve bean mixture over rice.
